COLUMN: Cheap College Eats – Three meals, one chicken

Hey, Reader! We’re back with another addition of cheap college eats, where each recipe can be made in the dorm and affordably! For this addition we will use lettuce, tomatoes and a rotisserie chicken that can be shared between all three meals to make it more affordable and reduce waste.

Today’s first recipe is Loaded Chicken Nachos.

To make this you’ll need:

  • Nacho chips
  • Small Nacho Cheese
  • Small Rotisserie Chicken
  • Barbecue Sauce (optional)
  • Jalapeños (optional)

To make this tasty creation:

  1. Use a fork to shred the desired amount of chicken, and heat it in the microwave for one to two minutes or until warm.
  2. Then heat the container of nacho cheese (this works best with small portion cups) being careful not to burn.
  3. Plate your chips, topping with the heated shredded chicken and nacho cheese.
  4. Add any additional toppings (barbecue sauce, cilantro, jalapeños, etc).
  5. Enjoy!

Our second recipe is a Shredded Chicken Wrap, a healthy option.

To make this you’ll need:

  • Small tortillas
  • Small Rotisserie Chicken
  • Shredded Cheese (optional)
  • Tomato (optional)
  • Lettuce (optional)

To enjoy this:

  1. Heat the desired amount of chicken on a microwave safe plate.
  2. Warm your tortillas for 10 seconds.
  3. Place the chicken on the tortilla along with any additional toppings.
  4. Heat the wrap together for 15-30 seconds or until the cheese is melted.
  5. Enjoy!

Our third meal is going to be a simple Shredded Chicken Salad.

To make this you’ll need:

  • Lettuce
  • Tomatoes
  • Dressing of choice
  • Any desired toppings (optional)

To have this healthy meal simply:

  1. Wash your tomatoes
  2. Assemble your salad
  3. Pour dressing
  4. Enjoy!
