Hey, Reader! We’re back with another addition of cheap college eats, where each recipe can be made in the dorm and affordably! For this addition we will use lettuce, tomatoes and a rotisserie chicken that can be shared between all three meals to make it more affordable and reduce waste.
Today’s first recipe is Loaded Chicken Nachos.
To make this you’ll need:
- Nacho chips
- Small Nacho Cheese
- Small Rotisserie Chicken
- Barbecue Sauce (optional)
- Jalapeños (optional)
To make this tasty creation:
- Use a fork to shred the desired amount of chicken, and heat it in the microwave for one to two minutes or until warm.
- Then heat the container of nacho cheese (this works best with small portion cups) being careful not to burn.
- Plate your chips, topping with the heated shredded chicken and nacho cheese.
- Add any additional toppings (barbecue sauce, cilantro, jalapeños, etc).
- Enjoy!
Our second recipe is a Shredded Chicken Wrap, a healthy option.
To make this you’ll need:
- Small tortillas
- Small Rotisserie Chicken
- Shredded Cheese (optional)
- Tomato (optional)
- Lettuce (optional)
To enjoy this:
- Heat the desired amount of chicken on a microwave safe plate.
- Warm your tortillas for 10 seconds.
- Place the chicken on the tortilla along with any additional toppings.
- Heat the wrap together for 15-30 seconds or until the cheese is melted.
- Enjoy!
Our third meal is going to be a simple Shredded Chicken Salad.
To make this you’ll need:
- Lettuce
- Tomatoes
- Dressing of choice
- Any desired toppings (optional)
To have this healthy meal simply:
- Wash your tomatoes
- Assemble your salad
- Pour dressing
- Enjoy!
